Spiciness in Thai cuisine

Thai food is known around the world for its rich, deep, and often fiery flavors. However, chili in Thai cuisine is not just an end in itself or a test of endurance; it is an essential part of a carefully guarded balance of flavors: the delicate harmony of spiciness, acidity, saltiness, and sweetness. At Little Thai restaurant, we want every customer to be able to enjoy this culinary journey in a way that is perfectly suited to them.

A balance of flavors and the magic of chili

Thai food is known around the world for its rich, deep, and often fiery flavors. However, chili is not just an end in itself or a test of endurance in Thai cuisine; it is an essential part of a carefully guarded balance of flavors: a delicate harmony of spiciness, sourness, saltiness, and sweetness. At Little Thai restaurant, we want every customer to be able to enjoy this culinary journey in a way that is perfectly suited to them.

The role of chili in Thai food culture

When you step into Little Thai, the aromas wafting from our kitchen – lemongrass, galangal root, fish sauce, and fresh chili – awaken your appetite. Thai cooking utilizes many different chili varieties, ranging from small and extremely hot bird's eye chilies (Phrik Khi Nu) to mild and sweet large chilies.

Chili doesn't just add a kick to the food; it enhances the best qualities of other ingredients, such as the richness of coconut milk or the freshness of lime juice. It also boosts metabolism and, according to traditional belief, provides the body with a cooling sensation in Thailand's tropical climate.

Customized heat – From zero to Thai-level

At Little Thai, we believe that good food should bring joy, not tears – unless that's what you want! That is why a large portion of our dishes allows the heat level to be fully adjusted to your preference. You can choose a suitable level from our four-step scale when ordering:

  1. Not spicy (Mild): A completely chili-free option. Perfect for children and sensitive palates. The aromas and herbs of the food shine through completely without any burn.

  1. A little spicy (🌶️): A small kick at a subtle level. Warms you up nicely but allows other flavors to take center stage without a strong burn.

  2. Spicy (🌶️🌶️): The true enthusiast's choice. The chili stands out strongly and gives the dish its traditional, bold character.

  3. Thai spicy (🌶️🌶️🌶️): An authentic, uncompromising Thai experience. Recommended only for those who are accustomed to very spicy food and want to experience the burn of chili as it is served in Thai street kitchens.

💡 Naturally spicy exceptions

Although most stir-fries and noodle dishes (such as the classic Pad Thai) can be prepared completely without chili, there are some dishes on our menu whose soul and structure are based on chili. For example, green curry and Tom Yum soup are made with traditional pastes and broths that already contain chili. Unfortunately, these dishes cannot be made with zero heat, as the chili paste gives them their characteristic color and basic flavor. Feel free to ask our staff for recommendations if you are looking for a completely mild option!

How to tame the burn of chili?

Sometimes the Thai heat can surprise even an experienced chili lover. If your mouth starts to burn too much, traditional water is not the best help, as the substance causing the chili's heat (capsaicin) does not dissolve in water but in fat.

The most effective way to extinguish the fire is to eat some jasmine rice or the snacks and crackers always available at our restaurant, which absorb the heat. Also, sweet and cool drinks, such as traditional Thai iced tea or sparkling water, work as a great way to reset your taste buds.
